Beer-Battered BBQ Schnitzel

INGREDIENTS (serves 4)

1 1/2 oz. barbecue potato chips + 3 oz. for coating the chicken

1/2 cup flour

2 tsp. baking soda

1 tsp. salt

1 cup beer

4 chicken breasts, flattened

Oil, for frying

PREPARATION

1. In a large bowl add 1 1/2 oz. smashed chips, flour, baking soda, salt, beer. Mix.

2. Cover flattened chicken in batter.

3. Cover in more smashed chips.

4. Fry on medium heat for about 2 minutes on each side. After 1 minute check that the bottom isn’t burning.
